Baked Oatmeal Cups

Breakfast options on-the-go are always my favorite. Truth be told, I’m always running late. Not because I wake up late, but my mornings are extremely busy. I get up before sunrise to get a good workout in, then I have to get my daughter ready for school and myself ready for work. The quicker the meal, the better.

These baked oatmeal cups come in handy all the time. I get a perfect serving of fiber and fruit in one little cup. I bake these ahead of time and portion them out for the week. Sometimes, I’ll have them while getting ready or take them to work.
