Vegan Blueberry Pie

Comfort food just got a lot healthier. This pie recipe proves that you can substitute ingredients for healthier options and still have a scrumptious dessert. When people hear vegan or gluten-free, they automatically think it won’t be as good as the “real” thing. But let’s face it: refined sugars, gluten, and vegetable oils are not necessarily good for us. 

I’m not going to lie–I was a skeptic when I made this recipe. I was scared about the crust falling apart and not tasting good. I was also afraid of the filling not being sweet enough. I was glad to be proved wrong.
