Savory Couscous Salad

If you’re wondering how to use couscous in your kitchen, you’re in for a treat with this healthy and refreshing salad. Originally, this salad called for late spring or summer nectarines or peaches, but that can be easily adapted as a cold-weather dish by substituting fall pears and persimmons. For this recipe, we’re going to use fuyu persimmons because of their sweet and fleshy cinnamon-like flavor. A slightly smaller variety known as organic sweet pumpkin persimmon is equally delicious and fitting, if you can find it.     

With the holiday season upon us, this is a great alternative salad that can help balance out the rich and heavy plates commonly served. It’s quick and easy to prepare and requires no cooking except for boiling water. Coupled with a citrus-savory dressing, it’s sure to be a holiday favorite for years to come!
