Turmeric and Mushroom Pilaf

The name pilaf may sound new, but it simply is a dish in which you cook rice in a flavorful broth. For this recipe we used vegetable broth but you can use any broth you wish, just watch out for the sodium levels. This dish in its simplicity, has an incredible flavor and a hint of Indian cuisine because of the turmeric’s distinctive aroma and taste. The turmeric and mushroom pilaf goes very well with a nice salad especially with your favorite combination of greens and veggies. As for salad dressing, all you need is the final touch of your favorite oil (I really like extra virgin olive oil) and prepare yourself to enjoy the exquisite mix of flavors!

Turmeric and Mushroom Pilaf

  1. 8 ounces of baby bella mushrooms (about a box)
  2. 1/2 cup brown rice
  3. 1 1/4 cups vegetable broth
  4. 1/2 red onion sliced
  5. Olive oil
  6. 1 teaspoon turmeric (or 1/2 more for a stronger taste)
  7. 1 handful fresh cilantro
  8. Pine nuts (handful)
  9. 1/2 lemon juice
  10. Himalayan salt and pepper
  1. Preheat the oven to 400 degrees F.
  2. Sautee the sliced onions with a little bit of olive oil (about a teaspoon).
  3. In a baking dish mix in the mushrooms, vegetable broth, red onion, brown rice, turmeric, about a teaspoon of salt and pepper and drizzle with a little olive oil on top.
  4. Stir so that the ingredients are evenly distributed and place in oven for 50 minutes or until rice is tender.
  5. Remove from the oven and top with pine nuts, lemon juice and cilantro.
