Winter season and soup go hand in hand and one can even say that it truly is the perfect match. Arriving home in a cool evening to a nice, warm, comforting bowl of soup can be “just what the doctor prescribed” to unwind from a long day. I find that the hardest challenge in making soup is to actually get the broth to come out flavorful. Making creamy soups on the other hand, eliminates that problem just with the simple extra step of blending all the ingredients together. This broccoli and turmeric soup not only is savory but it also has ingredients that will give your body quite the nutrient boost. What I also love about this recipe is that you basically cook everything together, blend it, and dinner is served. Bon appetit!

Broccoli Turmeric Soup - Pick Me Upper!
Serves 4
Creamy pick me upper broccoli and turmeric soup

Ingredients
  1. 2 large heads broccoli (remove stems leaving only the florets)
  2. 3-4 fresh basil leaves
  3. 1 white onion (diced)
  4. 1 stalk celery
  5. 1 small avocado
  6. 1 lemon
  7. 3 garlic cloves (minced)
  8. 1 tablespoon coconut oil
  9. 1 ½ teaspoons Himalayan salt
  10. 1 teaspoon turmeric
  11. ¼ teaspoon ginger
  12. ¼ teaspoon white pepper
  13. 4 cups organic vegetable stock
Instructions
  1. Add all ingredients except the avocado and lemon in a large cooking pot with lid and cook in medium heat until the veggies are tender (about 30 minutes).
  2. Remove soup from heat, pour into a blender, add the peeled and pitted avocado and blend until content is smooth.
  3. Pour soup into serving bowl and top with fresh lemon juice to your taste and green onion (optional).
