Quinoa, one of the favorites when it comes to ancient grains, can be used to make quite a variety of dishes from substituting rice and pasta to even being used in baking to make quinoa bites (recipe to Pizza Quinoa Bites). This veggie quinoa bowl is quite simple to make since you don’t cook the veggies making it even richer in nutrients! Although not everyone is in favor or willing to take the “raw” route, this dish will allow you to eat your raw veggies and enjoy them too by using one trick: making sure to cut the veggies in small pieces (especially the broccoli). With the quinoa still being hot freshly out of the heat, it will warm up your veggies too. This is why you’ll probably want to make sure that the veggies are all cut and ready to be mixed before the quinoa is done cooking.

Broccoli, Carrot, and Pecan Quinoa Bowl

For the quinoa
  1. 6-7 florets of broccoli
  2. ½ cup uncooked quinoa
  3. 1 white onion
  4. Handful grated carrots
  5. Handful cilantro chopped
  6. ¼ cup chopped green onions
  7. 2 tablespoons chopped pecans
  8. ½ teaspoon Himalayan salt
For the dressing
  1. 1 lemon
  2. 1 teaspoon sesame seeds
  3. 1 tablespoon raw coconut aminos (or soy sauce)
  4. 1 tablespoon sesame oil
  5. 1 tablespoon rice vinegar
  6. 2 garlic cloves minced
  7. 1 teaspoon ginger
Instructions
  1. Rinse quinoa and in a medium cooking pot, cook ½ cup of quinoa in 1 cup of water with ½ teaspoon salt and onions. Remove from heat.
  2. In a large bowl, mix in the cooked quinoa, broccoli, carrots, cilantro, green onions and pecans until ingredients are combined.
  3. In a small bowl mix all the dressing ingredients.
  4. Pour dressing over the quinoa and mix until evenly combined.
