PureEats: Dairy-Free Banana and Mixed Berries Ice Cream Cake



For many, the idea of dessert does not involve decadent chocolate pies, but instead the playful flavors of fruit desserts! If this description fits like a glove, you have come to the right place! The mixture of berries and bananas can never go wrong and this banana and mixed berries ice cream cake was insanely delightful!

Since this ice cream cake recipe has 2 layers, first the vanilla layer has to be done, followed by the berry layer.


Vanilla ice cream layer:

  • 2 cups cashews (no need to soak them)
  • 2 bananas (the riper the better)
  • 1 cup pitted dates
  • ¼ cup coconut oil
  • ½ teaspoon vanilla extract
  • ½ cup coconut water

Berry layer:

  • 2 cups frozen mixed berries
  • 1 cup pitted dates
  • 1 cup coconut water

To decorate (optional): strawberries cut in half


  1. Place halved strawberries around edge of a pan.
  2. Blend vanilla ice cream layer ingredients in blender or food processor until smooth. Spread contents into bottom of pan and let set in freezer.
  3. Blend berry layer ingredients in blender or food processor until smooth. Remove pan from freezer and spread berry content over vanilla ice cream.
  4. Place back in freezer for 2 hours.

You can always switch up the berry layer with other fruits. Mangoes make great ice cream, don’t you think?
