Now what better way to kick off our PureEats series than with Pizza Quinoa Bites! This recipe puts a healthy twist on the regular boring pizza. Plus, it’s so easy to make that kids won’t only enjoy eating it but they can help make it as well!

Did you know that quinoa is a great source of protein, healthy fats, magnesium, zinc, phosphorous and fiber? So why not add it to your list of superfoods and get some of these amazing nutrients in a tasty way!

Pizza Quinoa Bites


  • 1 cup uncooked quinoa
  • 2 plum tomatoes
  • 2 shallots (diced)
  • 2 garlic cloves
  • 2 large eggs
  • 1 cup shredded mozzarella
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt

For the tomato dipping sauce:

  • 4 plum tomatoes
  • 2 garlic cloves
  • oregano, basil, salt to taste



1. Cook quinoa

Rinse quinoa. Add quinoa and 2 cups of water in pan and place over high heat until water starts to boil. Cover pan and reduce heat to medium low and simmer until water is absorbed and quinoa is tender.

2. Preheat oven to 350 degrees.

3. Wisk eggs in a medium bowl and mix in spices, diced shallots, and garlic.

4. Add the cooked quinoa to the egg mix. Then mix the diced tomatoes and cheese.

5. Lightly grease mini muffin tray and fill each cup to the top.

6. Bake for 20 minutes or until golden.

7. Make tomato dipping sauce

Place diced tomatoes and other ingredients for the sauce in a pan and cover with lid. Just be sure to stir it every now and then until the tomatoes look like paste.

Serve quinoa bites with homemade tomato dipping sauce.

Makes 24 mini bites.
